I once faced that problem and what I did was the following:
If the set has been manually modified by a user in production system, you can see the history (GS03>Extras>History, press display change button) and you'll be able to see the previous values.
If the set was not modify by user, and was overwrite by another transport order, try to see the history in origin client and maybe you are able to deduct previous values.
That's the best I could do.
